Laminates for kitchen countertops can be made of formica, nevamar, and wilsonart.  These plastic coated synthetic surfaces are easily maintained.  They are inexpensive and durable and come in array of colors.  They can become scratched and easily stained if they are not taken care of properly.

Wood or butcher block is a great and welcoming look and come in different styles made of maple and oak.  They can be re-sanded and sealed should they become scratched and are easy to clean.  Over time, one may have to watch out for water stains and oil marks and reseal certain areas.
